Apple Almond Bread

Toast at 350º for 15-18 minutes:

-           1/2       -           cups     whole almonds

Chop coarsely and cool. Grease the bottom of an 8.5 or 9" loaf pan and set aside.

 

Peal and  dice:

1          -                                   large apple

In a mixer, blend until crumbly:

2          -           cups                 flour

1          -           cup                  sugar

2          -           teaspoon          cinnamon

1          -           teaspoon          baking powder

-           1/2       teaspoon          salt

-           1/2       cup                  softened butter

In a mixing bowl, beat:

2          -                                   eggs

2          -           tablespoons     yogurt

1          -           teaspoon          vanilla

 

A) Mix egg batter into flour mixture until just moistened. Add apples and almonds.
B) Spread batter into loaf pan and bake until done (about 60 minutes).
C) Cool for 15 minutes and remove from pan.

Theo and Nancy - Our friend Claudia turned us on to this recipe years ago. It is an autumn treat. We like to use Honeycrisp or Haralson (apples apples that have a firmer cooked texture).
