Banana Cream Pie

Bake a pie shell and set aside. We prefer a crust made with lard. Pappys is a good frozen pie crust dough for this recipe. Here is a recipe for a lard pie crust
LARD PIE CRUST
1 1/2 cup flour
- 1/2 cup leaf lard
- 3-4 Tbsp ice-cold water
- Fill a juice glass with cold water and add a couple of ice cubes. Allow the cubes to melt as the water reaches an ice-cold temperature.
- In a small bowl, mix flour and salt; cut or blend in lard until crumbly. Gradually add the ice-cold water one tablespoon at a time. Toss with a fork until dough holds together when pressed. Shape into a disk and place in a zip lock bag. Refrigerate for 1 hour or overnight.
- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. or 10-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Fill or bake shell according to recipe directions.
- Bake at 425°F (220°C) for about 12 minutes or more until golden brown.
VANILLA CREAM
Separate and set aside:
3 - - eggs yolks (slightly beaten)
In saucepan combine:
- 3/4 cup sugar
- 1/3 cup flour
- 1/4 tsp salt
Gradually stir in:
2 - cups milk
Cook and stir over medium heat till the mixture boils and thickens. Cook 2 minutes longer, then remove from heat.
Stir a small amount of hot mixture into the egg yolks.Then transfer the egg yolk mixture to the rest of the hot cream mixture. Cook for 2 minutes, stirring constantly. Remove from heat. Stir in the following:
2 - Tbs butter
1 - tsp vanilla
Cool to room temperature. (To prevent a crust from forming, cover with plastic wrap directly on top of the mixture touching the surface of the hot mixture all the way to the sides of the bowl.
To assemble pie, slice up:
6 - - bananas
Add bananas to the Vanilla Cream. Transfer the banana cream mixture into the pie crust and top with freshly made whipped cream.
