German Apple Pancakes (Apfel Pfankuchen)

Peel and slice:

3-4                                              apples (pealed and sliced)

In a skillet, melt:

2          -           tablespoons     butter

Sauté apples in butter for 2 minutes. Add:

-           1/4       cup                  brown sugar

-           1/4       teaspoon          cinnamon

-           1/4       cup                  Raisins

-           1/4       cup                  Roasted Almonds (coarsely chopped)

Sauté for 1 minute more, then set aside.

In a mixing bowl, beat with a whisk:

4                                              eggs

Add and mix:

-           3/4       cups                 milk

-           3/4       cups                 flour

                                                salt - to taste


  1. Preheat oven to 400 degrees.
  2. Generously grease non-stick popover cups.
  3. Pour milk into medium size mixing bowl.
  4. Add flour and salt.
  5. Using a rotary beater or wire whisk, beat until well blended. Do no overbeat!
  6. Add eggs one at a time. Beat just until completely blended after the addition of each egg.
  7. Pour batter over apples.
  8. Bake at 400 degrees for 30 minutes

This is a favorite at Theo and Nancy’s house. Laura and Zhiva Black highly recommend this for breakfast.
