Italian Wedding Soup

Meat Balls

Lb Ground Beef

Cup Bread Crumbs

Cup Parmesan Cheese

- Onion (Small, chopped fine)

tsp Oregano

tsp Garlic Salt

tsp Black Pepper

- Eggs (Beaten

 

  1. Mix ingredients together by hand.
  2. Form into 1 inch ball.
  3. Bake at 350 F for about 35 minutes.
  4. Set aside to cool thoroughly.
  5. If not cool, they will fall apart when added to the soup.

Soup

Qts Beef Broth

- Onion (Large - Cut into 1/2 in. Pieces

Oz Chopped Spinach
  1. Simmer the broth and onions together for a couple of hours
  2. Add Meat Balls (or if you prefer, Italian Sausage Slices.)
  3. Simmer for an hour.
  4. Add spinach and serve.
  5. Garlic Bread and Chianti are the perfect accompaniaments.

Background:
This is similar to the Italian Wedding Soup served a Mama Angelina in Mankato Minnesota in the 1970s.
