Margherita Flatbread Pizza

Makes 2 flat bread Margheritas.

Ingredients

2        -        -                  Whole Wheat Pitas

 -------------------------------------------------------------------

 8      -        Pieces         Fresh Mozzarella Sliced to 1/4" Thick x 3" Diameter

14      -        -                Cherry Tomatoes (Cut in halves)

6-8    -        Leaves        Fresh Basil (Finely Chopped)

 -------------------------------------------------------------------

 3        -        Cloves        Garlic (Pressed)

1.5     -        Tbsp           Olive Oil

1.5     -        Tbsp           Balsamic Vinegar

-        -        -                  Salt (to Taste)

-        -        -                  Pepper (to Taste)

 Instructions

  1. Press fresh garlic and mix with oil.
  2. Brush pitas with oil and garlic mixture. Reserve the remaining oil.
  3. Place in preheated to 350F oven on a pizza screen for 4 minutes to crisp up.
  4. Remove from oven and place 4 slices of mozarella on top of the flatbread, sprinkle with salt & pepper.
  5. Place thinly sliced tomatoes on top of cheese slices. Lightly sprinkle with additional salt and pepper.
  6. Return flatbreads to dle r
  7. oven for another 5 minutes.

  9. ack of a broiler oven (set to low broil) for an additional 2 minutes until golden brown on edges.
  10. Watch the bread closely to ensure it does not burn. If it begins to burn, remove it from the oven immediately.
  11. Whisk the remaining garlic oil with the balsamic vinegar until a smooth emulsion forms.
  12. Finely chop the basil leaves.
  13. Once flatbread pizza is baked, remove from the oven.
  14. Drizzle with reserved oil and balsamic vinegar mixture.
  15. Sprinkle with basil leaves.
  16. Cut into slices and serve.
