Margherita Flatbread Pizza

Makes 2 flat bread Margheritas.
Ingredients
2 - - Whole Wheat Pitas

8 - Pieces Fresh Mozzarella Sliced to 1/4" Thick x 3" Diameter
14 - - Cherry Tomatoes (Cut in halves)
6-8 - Leaves Fresh Basil (Finely Chopped)

3 - Cloves Garlic (Pressed)
1.5 - Tbsp Olive Oil
1.5 - Tbsp Balsamic Vinegar
- - - Salt (to Taste)
- - - Pepper (to Taste)

Instructions
- Press fresh garlic and mix with oil.
- Brush pitas with oil and garlic mixture. Reserve the remaining oil.
- Place in preheated to 350F oven on a pizza screen for 4 minutes to crisp up.
- Remove from oven and place 4 slices of mozarella on top of the flatbread, sprinkle with salt & pepper.
- Place thinly sliced tomatoes on top of cheese slices. Lightly sprinkle with additional salt and pepper.
- Return flatbreads to dle r
- oven for another 5 minutes.

- ack of a broiler oven (set to low broil) for an additional 2 minutes until golden brown on edges.
- Watch the bread closely to ensure it does not burn. If it begins to burn, remove it from the oven immediately.
- Whisk the remaining garlic oil with the balsamic vinegar until a smooth emulsion forms.
- Finely chop the basil leaves.
- Once flatbread pizza is baked, remove from the oven.
- Drizzle with reserved oil and balsamic vinegar mixture.
- Sprinkle with basil leaves.
- Cut into slices and serve.
