Quiche - Spinach Crustless

Makes 12 cupcake quiches.

Ingredients

TBSP Oil - Vegetable

- Onion - Medium, Minced

0z Spinach (comes in a frozen package) - Frozen, Thawed, Drained, Squeezed Dry

- Eggs - Large, Beaten

tsp Salt

tsp Pepper - Black Ground

Cups Cheese - Muenster, Shredded

 Instructions

  1. Gather the ingredients. Preheat oven to 350 degrees F (175 degrees C).
  2. Lightly grease a silicone muffin containers.
  3. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until soft, about 3 minutes. Stir in spinach and continue to cook until excess moisture has evaporated.
  4. Whisk together eggs, salt, and pepper in a large bowl.
  5. Add Muenster cheese and spinach mixture and stir until well blended.
  6. Pour into prepared pan.
  7. Bake in the preheated oven until eggs have set, about 15-20 minutes. Do not overbake,
  8. Remove from the oven and let cool for 10 minutes before serving.
  9. Serve hot and enjoy!
