Salmon with Sweet and Spicy Rub

Salmon Fillets, (6-ounces each) skin and any pin bones removed

Grilling Instructions

  1. Coat your grill or a grill pan with cooking spray and preheat over medium heat.
  2. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper.
  3. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.
  4. Grill the salmon, flesh side down, until charred, 4 to 5 minutes. (If baking, place salmon flesh side down on a grill pan and place grill pan on a parchment covered baking sheet. Bake at 425 degrees for 5 minutes.)
  5. Flip the salmon and cook another 5 to 6 minutes for medium doneness (internal salmon temperature is at least 155 degrees). For well done fish, cook an additional 1 to 2 minutes (internal salmon temperature is at least 165 degrees).
  6. Remove to a platter and serve immediately.
