Calico Beans (Vegan)

Directions:
- Saute onion and pepper with olive oil in large pot until onions start to brown.
- Add garlic and sauté for one additional minute (until fragrant).
- Prepare TVP by: Boil 2 cups of water or vegetable broth. Add TVP and steep for 10 minutes. Strain and fold into onion mixture.
- Prepare ketchup, cider vinegar, mustard, brown sugar, and liquid smoke mixture. Whisk and set aside.
- Add beans to crock pot.
- Stir in ketchup mixture.
- Combine all ingredients in crock pot and simmer for about an hour. Cook in crock pot on high setting for three hours.
Background:
We made these for a party to which a couple of vegetarians would be attending. Theo never thought the TVP would taste right. He was pleasantly surprised and the beans were a big hit with both vegetarians and with carnivores. Go figure!
