Apple Crepes (Updated)

Peel, slice, and dice and set aside:
1 apple [Optional]
Lightly grease skillet with:
- - butter
In a mixing bowl, combine/sift:
3/4 - cups flour
1/2 - teaspoon salt
1 - teaspoon double-acting baking powder
2 - tablespoons powdered sugar
Beat:
2 - eggs
Add and beat:
2/3 - cups milk
1/3 - cup water
1/2 - teaspoon vanilla
- Mix the dry ingredients together and make a well in the center.
- Add the liquid ingredients, and combine with a few swift strokes. Ignore the lumps.
- Preheat skillet to 400 degrees F.
- Grease heated skillet or electric frying pan.
- Pour in enough batter to cover the center of of pan. Keep turning pan to coat with a thin layer of batter.
- [Optional] Sprinkle in apple pieces. Sprinkle crepe with cinnamon.
- Turn crepe after bout one minute at medium heat. Crepes should have a golden color.
- Serve crepes with apricot jam or maple syrup. Spread a thin layer of apricot jam on half of the crepe and roll up.
Yield: Ten 7" crepes
