Apple Crepes (Updated)

Peel, slice, and dice and set aside:

1                                              apple [Optional]

Lightly grease skillet with:

-           -                                   butter

In a mixing bowl, combine/sift:

3/4        -          cups                 flour

1/2        -          teaspoon          salt

1          -           teaspoon          double-acting baking powder

2          -           tablespoons     powdered sugar

Beat:

2          -                                   eggs

Add and beat:

2/3       -           cups                 milk

1/3       -           cup                  water

1/2        -          teaspoon          vanilla

  1. Mix the dry ingredients together and make a well in the center.
  2. Add the liquid ingredients, and combine with a few swift strokes. Ignore the lumps.
  3. Preheat skillet to 400 degrees F.
  4. Grease heated skillet or electric frying pan.
  5. Pour in enough batter to cover the center of of pan. Keep turning pan to coat with a thin layer of batter.
  6. [Optional] Sprinkle in apple pieces. Sprinkle crepe with cinnamon.
  7. Turn crepe after bout one minute at medium heat. Crepes should have a golden color.
  8. Serve crepes with apricot jam or maple syrup. Spread a thin layer of apricot jam on half of the crepe and roll up.
